Who loves cooking. I always have.
I am always refining new recipes and tweaking them.
I am however, gluten free and dairy free, so I am always after a good recipe to use.
Before I had dietary needs, I was always adding or thinking outside the square with recipes.
It took me a while to figure out how to substitute eggs, different flours, what flours I liked and didn't like.
I like buckwheat flour, but I am not a fan of coconut flour.
This recipe contains no nuts, eggs, gluten or dairy- just icing sugar for the icing.
Today I tweaked a orange poppyseed muffin recipe. Its absolutely delicious and rises beautifully.
Here is a little sneak peak.
I had a request to make ginger muffins from hubbie today. So I went about changing the recipe accordingly. I added a sneaky amount of grated carrot as well. I added my ginger essential oil to give it a nice kick.
Yes, I cook with essential oils that are labelled food grade.
This recipe could easily be a base for a savoury muffin as well.
